In an 1892 birth record from what is now Poland, a witness is described as a 52-year-old "костельный служитель." Of course, I could just translate it as "church servant," but really have no concept of what that might be. Any idea as to what this person's actually job entailed?

I think this is the most likely meaning, although "churchwarden" as a specific title is largely restricted to the Anglican (Episcopalian) Church.
