Certains considèrent le végétarisme comme une forme d’alimentation plus pure, plus écologique, plus éthique.
Si les bienfaits du végétarisme bien équilibré et varié ne sont plus à prouver, une question demeure entière : est-il nécessaire d’éliminer toutes les sources de produits animaux pour garder un état de santé optimal ou atteindre un plus grand développement spirituel? Dans l’état actuel des connaissances scientifiques, aucune réponse claire ne permet de clore ce débat. Chacun doit trouver ce qui lui convient.
Quelques soient les raisons qui motivent votre choix du végétarisme : santé globale, intolérance grave aux produits laitiers, dédain marqué pour la viande ou les œufs, souci écologique ou d’équité sociale, compassion pour les animaux ou à cause des nouvelles maladies qui les affectent, assurez-vous d’inclure au menu une variété suffisante d’aliments. En suivant ce guide, vous serez en mesure de combler vos besoins essentiels pour tous les éléments nutritifs. Celui-ci convient aux lacto-ovo-végétariens aussi bien qu’aux lacto-végétariens. Il peut aussi aider les semi-végétariens consommant occasionnellement (une à deux fois par semaine) poissons, fruits de mer ou poulet.

Il existe aussi des marques de levure alimentaire qui contiennent des formes actives de B12 pouvant combler les besoins.
Une carence en vitamine D peut survenir si l’ exposition moyenne au soleil sans écran solaire, bras et visage découverts, de mai à octobre est inférieure à 15 minutes par jour. Il faut alors prendre chaque jour un supplément de 400 UI de vitamine D et particulièrement après 50 ans afin de conserver une santé osseuse maximale.

Whatever be the reasons which determine your choice of vegetarianism: general health, severe intolerance to dairy products, marked dislike for meat or eggs, ecological or social equity concerns, compassion towards animals, a sentiment which may also arise due to new illnesses that afflict them, ensure that you include a sufficient variety of foods in your diet. By following this guide, you will be able to fulfill all your vital nutrient requirements. This applies to ovo-lacto-vegetarians as well as to lacto-vegetarians who do not eat eggs but consume dairy products. It can also help semi-vegetarians, who occasionally eat (once or twice a week) fish, seafood or chicken.
A recipe book called Vegetarian Feasts is also available and can prove to be highly useful if you have recently turned vegetarian or if you wish to include vegetarian dishes in your menu for some variety.
Veganism (pure vegetarianism)
This form of vegetarianism excludes all products of animal origin from the menu, including dairy products, eggs, meat stocks, gelatin, and in some cases, even honey. Such a restrictive kind of diet carries risks of vitamin B12 deficiency, since foods of vegetal origin do not contain this vitamin. A vitamin B12 supplement, taken on its own and not in the form of multivitamins, becomes indispensable since one cannot appropriately assess their reserves and they vary from one individual to another. There are also brands of food yeast, which contain active forms of vitamin B12 capable of meeting the requirements.
A vitamin D deficiency may also occur from May to October, if the average exposure to the sun during this period is less than 15 minutes per day, without the use of sunscreen and with uncovered arms and face. One must therefore take an extra 400 IU of vitamin D daily and all the more so after turning 50, in order to preserve maximum bone health.
The Vegan Supplement is a specially designed tool that provides more information for vegans. It combines with the current guide to recommend the servings chart, which remains the same. It consists of nine food groups that replace the nutrients normally provided by dairy products and eggs.
