E412 - GUARGUMMI er et kulhydrat, der udvindes af frøene fra bælgplanten Guar. Stoffet bruges som stabilisator i is, så den ikke smelter hurtigt. Guargummi bruges også til at gøre ketchup og salatdressinger tyktflydende og i slankeprodukter, piller, tekstiler, kosmetik og maling. Guargummi passerer tarmen uden at blive optaget i kroppen og giver normalt ingen problemer. I visse slankeprodukter har man dog brugt for store mængder, og i få tilfælde er folk er blevet kvalt, fordi pulveret er svulmet op og har lukket for luftrøret. E-nummerbogen, 7. udg.
