Unter Bioverfügbarkeit versteht man die Menge eines Nährstoffs, die tatsächlich aus dem Lebensmittel in den Körper aufgenommen und für diesen verfügbar gemacht wird. Diese Menge entspricht nicht unbedingt der Menge, die über die Nahrung zugeführt wird.
