Unter Bioverfügbarkeit versteht man die Menge eines Nährstoffs, die tatsächlich aus dem Lebensmittel in den Körper aufgenommen und für diesen verfügbar gemacht wird. Diese Menge entspricht nicht unbedingt der Menge, die über die Nahrung zugeführt wird. Dabei geben die Mechanismen der Absorption (Nährstoffaufnahme aus dem Darm in den Körper) Auskunft über das Verhältnis der mit der Nahrung zugeführten Menge zu der vom Körper aufgenommenen Menge.
