La goma guar es un polisacárido soluble en agua que se usa principalmente en la industria alimenticia, en jugos, helados, salsas, comida para mascotas.
La goma guar es el polisacárido de reserva nutricional de las semillas de Cyamopsis tetragonoloba, una planta de la familia de las leguminosas. En la India esta planta ha sido utilizada en la dieta humana durante cientos de años. La molécula de guar es un polímero lineal con un peso molecular aproximado de 220.000.

Guargummi (guarmjöl) utvinns från frön av baljväxten Cyamopsis tetragonoloba - en gammal kulturväxt i Indien och Pakistan. Fröna används i dessa länder som näringsmedel och som förtjockningsmedel i modern matindustri.
