La burrificazione è il processo di produzione del burro, in cui 100 litri di latte vengono trasformati in 4-5 chili di prodotto finito. Consta di sei passi: 1. pastorizzazione della crema, che avviene a 90-95 °C per 30 secondi. Tale processo ha lo scopo di stabilizzare il prodotto e liquefare maggiormente la materia grassa, favorendo la successiva cristallizzazione. 2. cristallizzazione, in cui la crema viene raffreddata rapidamente fino a 6-7 °C 3. addizione delle colture, in cui vengono inoculate colture di batteri che conferiscono l'aroma al burro 4. zangolatura: la crema viene messa in recipienti detti zangole, dove è sbattuta energicamente per 40-50 minuti alla temperatura di 12 °C così il grasso si agglomera in particelle delle dimensioni di un chicco di mais circa, separandosi dal liquido che conteneva (il latticello) (facoltà di agraria, Università Udine)
