c'est ce que j'ai trouvé sur google. Ca ne me convainc pas non plus, mais il y a tellement de désignations absconses en francais pour certaines spécialités culinaires, par exemple un "chateaubriand" pour un steak de boeuf saignant, un "réveil-matin" pour un poulet rôti ou encore un "paris-brest" pour une variéte de tartelette, que tout est possible

Sans contexte et vu notre décalage horaire, je me lance dans cette supposition :

d'origine (sous-entendu contrôlée) : pur boeuf canadien, américain , argentin, par opposition à des hâchés fait de mélanges de sources différentes et dont la provenance ne peut être expliquée.
Et qui peut expliquer la différence entre un vrai bon hamburger et le "dégueulasse" du fast-food.

"parures"? = les bas-morceaux? Même en cuisine, je dois m'abstenir de répondre à une question d'origine canadienne -:)

In American English this term has no meaning. If you check Google the only hit is the proz.com question
