I would go with "pinpoint" for the "punkt" part of the word. "Dot" sounds strange in this context.
As for the sentence overall, I'd say something like: "For the last (or past) 80 years or so, quality control charts have been used throughout the world to regulate complex procedures with pinpoint accuracy/precision according to target specifications".
Don't know if that's entirely perfect, but hope it's of some help! But one thing I am sure about - don't say dot here! Pinpoint works pretty well though.
