I found a helpful "tesi" that provides an answer. If you do a "find word" on the page you'll see the following: "[...] preparato con la carnetta, cioè con quelle parti muscolari difficilmente vendibili come tali."
Parts of the muscle system that cannot be sold "as is"? Must be cheap leftovers?
Maybe "trimmings," "discards," or "ground meat"?

Grazie--I find this one very hard, however. I mean, in the sentence provided above it appears a very specific thing, yet I cannot identify any refined definition, let alone a English correspondent.
