Just my two cents, but I would say goats, horses, deer and bovines (the last because bison, "uros" and others existed at that time, but I don't this that the modern cow did)

As far as not using "equinos" is concerned, there was probably only one species of wild equine in the area, whereas there were several species of goats and sheep, deer, elk, etc.

You know what your register you're after, but it does strike me that, given the Spanish tendency to make things sounds much more academic than in English, simply "deer" and "goats" might do...
