English term

guar gum

GBK English to French Other Food & Drink
Definition from IFIC Foundation:
A substance made from the seeds of the guar plant which acts as a stabilizer in food systems. Is found as a food additive in cheese, including processed cheese, ice cream and dressings.
Example sentences:
As a result of its high water-binding capacity, guar gum provides extremely high viscosity in water-based systems even at low dosage levels. Guar gum is mainly used as a thickening agent. (Danisco A/S )
Guar gum is not just a thickening agent, but a binder and plasticizer as well. When untreated ice cream melts and refreezes, grainy ice crystals often form. Guar gum has the natural ability to bind with water molecules, preventing them from forming the unwanted crystals. (wiseGEEK)
Guar gum (E412, also called guaran) is extracted from the seed of the leguminous shrub Cyamopsis tetragonoloba, where it acts as a food and water store. (Martin Chaplin)

E 412

Guar gum n'est que rarement mentionné, pour ceux qui prennent la peine de lire la liste des ingrédients sur les étiquettes, l'industrie lui préferent la nomenclature E 412
Definition from Wikipedia:
Guar gum is extracted from the guar bean, where it acts as a food and water store. The guar bean is principally grown in India and Pakistan, with smaller crops grown in the U.S.A., Australia, China, and Africa. The drought-resistant guar bean can be eaten as a green bean, fed to cattle, or used in green manure.

The largest market for guar gum is in the food industry. In the US, differing percentages are set for its allowable concentration in various food applications.[6] In Europe, guar gum has EU food additive code E412.
Example sentences:
Baked goods - increases dough yield, gives greater resiliency, and improves texture and shelf life; in pastry fillings, it prevents "weeping" (syneresis) of the water in the filling, keeping the pastry crust crisp.[7] (Wikipedia)
Dairy - thickens milk, yogurt, kefir, and liquid cheese products; helps maintain homogeneity and texture of ice creams and sherbets (Wikipedia)
Dressing and sauces - improves the stability and appearance of salad dressings, barbecue sauces, relishes, ketchups and others (Wikipedia)
Note from asker:
Sorry, I had only a choice between 'agree' and 'disagree' in my form, so I chose a disagree which is, you're right, a bit mean to you! Entering my own answer would have been better. Sorry for that!
Thank you. One day (perhaps) I will get my head around French abbreviations.
Never!!!! ;) ? Thanks for your encouraging comment. I might be long in the tooth but there is always hope!
Peer comment(s):

Hi N., you're offering an alternative & a justified one at that, but since my entry is equally correct a " neutral" would have been sufficient or even entering your own answer. Trying to be mean to end 2008 ? NO PROBLEM & A HAPPY NEW YEAR TO YOU
agree Line Merrette : Je n'ai jamais vu E412 en contexte nord-américain. Je pense qu'il faudrait indiquer cela comme un synonyme mais pas comme seule entrée.

you got a point there, but in another hand it's ENG>FRE, thanks anyway & a happy New Year
