Between flowering (floración) and veraison (envero). It makes sense too, because "set" is a standard translation of "cuajar" in general.

ready,curdled,set to consume

In Spanish, you would say 'listo' as well. it is when the food is ready to consume, if we are talking about a food product or a cheese.
Example sentence:

I knew the milk was curdled when I saw the lumps in it.
