We need a mouille, this monstrous piece of equipment we use in the equipment, to puree the potatoes. Just need to get a hot potato, just been roasted, and straight away scoop in the puree into our Mr Mouille. You can use a strainer, you can use a potato masher, you can use even a fork if you want to, but a professional chef like me cannot live without a mouille.

= l'atrezzo di acciao o acciao e plastica che si gira manualmente per fare il passato di pomodoro o verdure. Per non fare confusione con lo schiacciapatate (atrezzo che si schiaccia invece di girare appunto) che in inglese si dice 'potatoe ricer' credo-:) Ho entrambi gli atrezzi a casa e in Inghilterra chiamano il mouille-mouli baby-perchè si usa per preparare la pappa da neonato.

: sì, direi passaverdure, contrapposto a setaccio e schiacciapatate (credo anch'io che si intenda l'attrezzo manuale "antico" e non il robot da cucina).
