Because of their increasing weight, sediments pressed the oceanic crust into the upper mantle where it melted. The molten stone rose up and reacted chemically with the sediment. This reaction led to the development of granite.
Because of the lower density of this stone, granite eventually raised itself out of the sea and formed the first non-volcanic continents.

You are correct. The text seems to be written for a layman, with all the inaccuracies that go along with that. Theoretically, melted oceanic crust may pick up enough silica during interaction with a sediment to produce a granite. So, technically the text is not wrong. However, such a situation is really hard to imagine happening in reality unless there are a lot, and I mean A LOT, of intermediate steps left out. Hope this helps.

Reading the whole paragraph and not just the first sentence, I see that this is an extremely oversimplified explanation of how the first continents formed. The first granite was derived from oceanic crust simply because there was no continental crust yet. However, it was a long process.

By stone, they mean the oceanic crust.
