raising the fish to reach marketable biomass of 2 kg

It's actually called fish farming, but for the purposes of this sentense "farming fish to reach..." sounds a bit odd.
But, it would be more accurate.

raising sturgeons to a marketable 2 plus kg

In fishery, biomass is usually total wet weight; in other cases, it's dry weight. To use the term "biomass/weight" is redundant since the the unit kg is a measure of mass/weight. Of course, if you're getting paid by the word you could really stretch it out and say fish of the Aspenseridae family, and instead of fish farming or farming fish you could use aquaculture or aquafarming, etc., etc. Isn't it great being a translator with so many choices and variations!!!
