Guarkernmehl stammt von dem Samen des indischen Baumes Cyamopsis tetragonolobus, der botanisch den Leguminosen zuzuordnen ist.
Aus dem vermahlenen Keim mit 45-50 % Proteinen und 6-10 % Galaktomannan wird das Guarmehl gewonnen, das als Tierfutter verwendet wird.
Guargummi (Guarkernmehl) ist das vermahlene Endosperm, d. h. das Nährgewebe, das den Keimling im Samen umgibt. Es enthält 65-76 % Galaktomannan, ein langkettiges Kohlenhydrat aus den Zuckern Mannose und Galaktose, und etwa 6-7 % Protein
