Вообще-то "заядлый" довольно разговорное слово, лично у меня оно вызывает скорее ассоциации с рыбаками и болельщиками, чем с юристами :), словарь дает также синоним "рьяный", zealous.
Может быть, подошло бы еще "keen lawyer", вот эти ребята использовали это для названия своего сайта:

Could also be "inveterate" or "dyed-in-the-wool", but I prefer "through and through".
